If I use the email signature with my photo the photo blows up to use the entire screen on the receiving end.

This usually depends on the email client you are using. You may face this issue if the email client does not support the copied signature or HTML email signature. We cannot do much about it on our end as we do not have any control over it. In such a case, you may download the signature image and use it as your email signature.
